Ingredients

Small watermelon, diced
½
Persian cucumbers, sliced
5–6
Crumbled feta (fresh in brine, sheep feta recommended)
½ cup
Handful fresh mint leaves, chopped
1
Juice of 1 lime
1 Juice
Sea salt
to taste
Olive oil
to taste

Instructions

  1. Dice 1/2 small watermelon

  2. Slice 5–6 Persian cucumbers

  3. Add about 1/2 cup crumbled feta (use the fresh kind in brine! My fav is sheep feta)

  4. Chop a handful fresh mint leaves

  5. Add juice of 1 lime

  6. Sprinkle of sea salt & olive oil

Tips & Advice

Chill everything first (especially the watermelon and cucumbers). This salad is best ice-cold.

Pat the watermelon dry after dicing to avoid extra water diluting the flavor.
