Ingredients

Chicken breasts
1–2 (about 12–16 oz)
Paprika
1 tsp
Garlic powder
1 tsp
Onion powder
1 tsp
Ghee
1 tbsp
Cooked jasmine rice
1½ cups
Organic arugula
1–2 cups
Persian cucumber, chopped
1
Cherry or grape tomatoes, halved
1 cup
Sheep’s feta, crumbled
¼ cup
Olive oil
1 tbsp
Juice of ½–1 lime
½–1 lime
Sea salt
to taste

Instructions

  1. Season chicken w/ paprika, garlic, onion & cook in cast iron pan with ghee until done. Gives it a nice sear!
  2. Put 1–1/2 cup cooked Jasmine rice in a bowl, layer organic arugula on top
  3. Chop up 1 Persian cucumber and a few tomatoes to sprinkle on
  4. Add sheep’s feta as well
  5. Drizzle with olive oil, fresh lime juice & sea salt
Tips & Advice

Let the chicken rest for 5 minutes after cooking before slicing.
