Ingredients

Chicken Breasts or Thighs
3-4
Green Apple, Peeled and Chopped
1 apple
Celery Stalks
2–3 chopped stalks
Red Onion
1/2 chopped
Organic Greek Yogurt
4–5 tablespoons
Splash of Apple Cider Vinegar
about 1–2 teaspoons, to taste
Juice of 1 lime
1 lime
Stone-Ground Mustard
3 tablespoons
Sea salt, Garlic powder, Onion powder, Black pepper
to taste

Instructions

  1. Boil 3–4 chicken breasts or thighs.
  2. While the chicken is boiling, prepare:
    1 green apple, peeled & chopped
    2–3 stalks of celery, chopped
    1/2 red onion, chopped
  3. In a large bowl mix up:
    4–5 big spoonfuls of organic Greek yogurt
    Splash of apple cider vinegar
    Juice of 1 lime
    3 tbsp stone ground mustard
  4. Mix all together.
  5. Season with sea salt, garlic powder, onion powder, pepper. Mix this all up.
  6. Once chicken is shredded and cooled down, combine it with the dressing in a large bowl and add all chopped ingredients.
Tips & Advice
It’s delicious in a wrap, as a sandwich, alone, or on top of greens.
You can sub 1/2 Greek yogurt and 1/2 avocado oil mayo if you prefer!
